BBQ Version 1.1

For the July 4th festivities, we smoked twos slabs of pork ribs and a brisket. Adjustments to the method:
- Regular charcoal with a moderate amount of hickory instead of the mesquite from 1.0.
- Temperature maintained at 230-240 degrees, on average, 30 higher than 1.0.
This batch was better than the last. The ribs were more tender – and the smoke more pleasantly mellow. Hickory is a much better wood than mesquite for long, slow, smoking. I’ll use up the mesquite for grilling.
Version 1.2 will involve my own custom dry rub and sauce. The design process has been initiated.
